Eclectic Chicken Salad

Yummy chicken salad prepared in less than 15 minutes with healthy ingredients packed with nutrition.

Servings: 1-2 / Double the chicken salad recipe: 3 servings
Chicken Salad

10 ounce can premium white chicken in chunks (drain) – Crider
2 stalks celery (chopped)
2 tablespoons bread and butter pickles (chopped) – House of Webster
1-2 tablespoons olive oil mayonnaise – Hellman’s

1 teaspoon garlic (finely minced) – Spice World or you can use fresh garlic
1/8 teaspoon of salt
1/8 teaspoon of coarsely ground black pepper

Directions

Mix all ingredients together and set aside.


 Parmesan Bread (per serving)

1 slice organic whole wheat bread – Good Seed Dave’s Killer Bread (My favorite bread ever!)
1 tablespoon shredded parmesan cheese
1/8 teaspoon crushed red pepper – McCormick Gourmet

Directions

Sprinkle shredded parmesan cheese and crushed red pepper on whole wheat bread and broil in oven until lightly brown, cut in 4 linear strips, and place on individual plate.

Place large round scoop of chicken salad on plate and garnish with a sprinkle of crushed red pepper.

Compliment with ½ Honeycrisp red apple (thinly sliced).
